The saga of making a "simple" dinner

We had two very good friends, Vera and Lida, over for dinner tonight. Yesterday I decided I wanted to make burritos for the dinner. Sounds like an easy meal, right? Well, it is an easy meal back home. But it's another story here. I had to make everything from scratch - including the tortillas, the salsa, the refried beans. Everything. So it literally took allllll day! I started this morning at 11am, making the salsa and tortillas. Yes, I'm an amateur when it comes to scratch meals, but still! I am really tired, but satisfied that my first attempt at making tortillas was a success. I've heard they can be pretty fussy. You have to have the right kind of griddle, a hot enough surface, the right everything. Big props to More-With-Less cookbook that has been a lifesaver here (although some ingredients you just can't get here, no matter how basic they seem in the States) and to our team member, Gordy, who gave me great advice on making tortillas. Thanks! It was a success. I am learning to cook very differently here in Albania. It's been an adventure to find the ingredients, the labels of which are mostly in Albanian, Greek, and Italian.
